Confessions of a Foodie: Canada Day!

I must admit Canada Day snuck up on me. This morning I realized that during my late night grocery run last night, I forgot to get bread. My fave go to when that happens are vanilla crêpes. Crêpes are great for breakfast, lunch, or dessert. Today I opted for a strawberry version seeing that today is Canada Day. Because I love sweet baked goods I also made an Irish Cream Strawberry trifle for dessert! You can check that out in my next post! Hope you enjoy these treats!

Vanilla Crêpes

Ingredients:

1 1/2 cups milk

3 eggs

2 tablespoons vanilla extract

1 1/2 cups  flour

2 tablespoons raw sugar

1/2 teaspoon salt

5 tablespoons melted butter

Directions

Mix ingredients together in a large bowl until well blended.

Heat a  pan over medium heat until hot and coat with desired oil or cooking spray.

Pour about 1/2 cup of batter into the pan and tip to spread the batter to the edges.

When bubbles form on the top and the edges are dry, flip over and cook until lightly browned on the other side and edges are golden.

Repeat with remaining batter.

Fill crepes with your favourite fruit, cream, caramel or even ice cream or cheese to serve.
